

SPICY LEMON CHICKEN WITH VEGETABLES IN PARCHMENT COOKED ON THE GRILL
SERVES 2-4
INGREDIENTS
– 2 large sheets of aluminum foil
– 3 tbsp olive oil
– 1 red onion, quartered
– 2 small zucchinis, sliced
– 1 head of broccoli, cut into florets
– 1 cup cooked rice
For the Marinade
– 2 chicken breasts
– 1 can (355ml) Montellier sparkling water with lemon
– 1 tsp chili powder
– 1 tsp onion powder
– 1 tsp dried oregano
– 1/2 tsp paprika
– 1/2 tsp cayenne
– 1/2 tsp garlic powder
– Salt and pepper
INSTRUCTIONS
- In a resealable bag, mix all the marinade ingredients and let the chicken breasts marinate in the fridge for at least one hour.
- Preheat the grill to 400°F.
- In the center of a large sheet of aluminum foil, place half of the olive oil, onions, zucchinis, and broccoli.
- In the center of the other sheet of foil, place the chicken breasts and discard the excess marinade. Add the remaining olive oil.
- Seal the packets well by folding the edges of the foil towards the center to create a small closed pouch.
- Place the packets on the grill and cook for 30 minutes.
- Slice the chicken and serve with the vegetables and a side of rice.
