SPICY LEMON CHICKEN WITH VEGETABLES IN PARCHMENT COOKED ON THE GRILL

SERVES 2-4

INGREDIENTS

– 2 large sheets of aluminum foil
– 3 tbsp olive oil
– 1 red onion, quartered
– 2 small zucchinis, sliced
– 1 head of broccoli, cut into florets
– 1 cup cooked rice

For the Marinade
– 2 chicken breasts
– 1 can (355ml) Montellier sparkling water with lemon
– 1 tsp chili powder
– 1 tsp onion powder
– 1 tsp dried oregano
– 1/2 tsp paprika
– 1/2 tsp cayenne
– 1/2 tsp garlic powder
– Salt and pepper

INSTRUCTIONS

  1. In a resealable bag, mix all the marinade ingredients and let the chicken breasts marinate in the fridge for at least one hour.
  2. Preheat the grill to 400°F.
  3. In the center of a large sheet of aluminum foil, place half of the olive oil, onions, zucchinis, and broccoli.
  4. In the center of the other sheet of foil, place the chicken breasts and discard the excess marinade. Add the remaining olive oil.
  5. Seal the packets well by folding the edges of the foil towards the center to create a small closed pouch.
  6. Place the packets on the grill and cook for 30 minutes.
  7. Slice the chicken and serve with the vegetables and a side of rice.
