

WHITE BREAD WITH SPARKLING WATER
In pastry creation, it is important to allow air to enter, and this is exactly what the addition of sparkling water does. It will add a “fluffy” and light texture to your recipe.

COOKING TIME: 60 MIN
INGREDIENTS
– 4 1/2 cups bread flour or all-purpose flour
– 1/2 cup rolled oats
– 1 1/4 tsp salt
– 1 packet (8g) instant yeast
– 1 can (355mL) Montellier sparkling water (room temperature)
– 1/2 cup warm milk (120°F / 49°C)
INSTRUCTIONS
- Preheat the oven to 425°F.
- In a bowl, mix the bread flour, oats, salt, and yeast.
- Alternately add the sparkling water and milk to the flour mixture. Mix well with a wooden spoon or spatula.
- Let rest for 2 hours in the bowl, covered with a warm, damp cloth.
- Add 1/4 cup of flour to knead on a work surface.
- Prepare a buttered Dutch oven, place the dough inside, and sprinkle with oats.
- Allow to rise for 45 minutes.
- Bake for 30 minutes with the lid on, then 30 minutes without the lid.
