WHITE BREAD WITH SPARKLING WATER

In pastry creation, it is important to allow air to enter, and this is exactly what the addition of sparkling water does. It will add a “fluffy” and light texture to your recipe.

PREP TIME: 20 MIN + 2H45 RESTING

COOKING TIME: 60 MIN

INGREDIENTS

– 4 1/2 cups bread flour or all-purpose flour
– 1/2 cup rolled oats
– 1 1/4 tsp salt
– 1 packet (8g) instant yeast
– 1 can (355mL) Montellier sparkling water (room temperature)
– 1/2 cup warm milk (120°F / 49°C)

INSTRUCTIONS

  1. Preheat the oven to 425°F.
  2. In a bowl, mix the bread flour, oats, salt, and yeast.
  3. Alternately add the sparkling water and milk to the flour mixture. Mix well with a wooden spoon or spatula.
  4. Let rest for 2 hours in the bowl, covered with a warm, damp cloth.
  5. Add 1/4 cup of flour to knead on a work surface.
  6. Prepare a buttered Dutch oven, place the dough inside, and sprinkle with oats.
  7. Allow to rise for 45 minutes.
  8. Bake for 30 minutes with the lid on, then 30 minutes without the lid.
