

CORN, MANGO & LIME SALSA

INGREDIENTS
2 tomatoes, quartered and deseeded
1 clove of garlic, finely chopped
1 handful of fresh cilantro
1 jalapeño pepper, deseeded
2 tsp of sugar
Kernels from 4 cooked corn cobs
2 mangoes, peeled and diced
1 red onion, finely chopped
1 355ml can of Montellier sparkling lime water
Salt and pepper to taste
Tortilla chips
INSTRUCTIONS
- In a food processor, blend the tomatoes with the garlic, cilantro, jalapeño, and sugar.
- In a bowl, mix the corn kernels with the mango pieces, red onion, and the can of Montellier sparkling lime water.
- Add the tomato mixture, mix well, and season to taste.
- Serve with tortilla chips.
