CORN, MANGO & LIME SALSA

PORTION 4

INGREDIENTS

2 tomatoes, quartered and deseeded
1 clove of garlic, finely chopped
1 handful of fresh cilantro
1 jalapeño pepper, deseeded
2 tsp of sugar
Kernels from 4 cooked corn cobs
2 mangoes, peeled and diced
1 red onion, finely chopped
1 355ml can of Montellier sparkling lime water
Salt and pepper to taste
Tortilla chips

INSTRUCTIONS

  1. In a food processor, blend the tomatoes with the garlic, cilantro, jalapeño, and sugar.
  2. In a bowl, mix the corn kernels with the mango pieces, red onion, and the can of Montellier sparkling lime water.
  3. Add the tomato mixture, mix well, and season to taste.
  4. Serve with tortilla chips.
